How To: Rocky Road Easter Cookies

It seems like I have a bit of a Rocky Road Easter extravaganza tradition happening. Last year it was rocky road bunny pops and this year, I’m honouring the all enchanting cookie. Easily enjoyed with a glass of tea or milk – it’s the sugar hit you never thought you needed. The cookies were crisp on the outside with a lovely soft crumbed centre with bits of chewy marshmallow and lollies inside. It’s definitely one to woo all our tastebuds and so simply too.

How To: Rocky Road Easter Cookies
Makes 25 cookies

What you’ll need:
– 
250g unsalted butter (softened to room temp)
– 1 egg
– 230 grams flour
– 1/2 tsp. baking soda
– 2 tsp. vanilla essence
– 50g white sugar
– 50g brown sugar
– 50g crushed peanuts
– 2/3 cups of desiccated coconut
– 50g mini marshmallows (or large ones quartered)
– 50g Cadbury Jubes (each piece cut into smaller segments – or any gummy lolly of your choice)
– 50g white choc chips

How To:
1. Pre-heat oven to 170 degrees Celsius or 330 degrees Fahrenheit
2. Line a baking tray with baking paper then set aside
3. Beat butter and sugar into a bowl until well incorporated
4. Add egg and vanilla essence to the mix and beat well
5. Slowly sift in flour, baking soda and coconut and mix until well combined
6. Fold peanuts, marshmallows, choc chips and Jubes into the cookie dough until evenly spread
7. Take approximately 1 Tbs. of dough and roll into your palm to form a ball then proceed to make one a cone shape to ensure that when the cookie dough flattens in the oven, it will create an oval easter egg shape
8. Place cone like cookie dough bits onto a tray approximately 5cms apart to ensure they don’t stick together when bakes
9. Pop into the oven for about 10 minutes or until lightly brown
10. Leave on the tray to cool for 5 minutes before transferring onto a cooling rack
11. (optional) When cookies are cooling, place white choc chips cookies on top to enhance the cookie look then consume!

Now, I know they don’t look as Easter egg – like as I hoped but, the notion was there. I found that the more exaggerated I made the cookie dough cone shape, the better the egg like shape appeared. So, don’t be disheartened if your cookies don’t turn out perfect, they make up in taste – I promise!
